1 Bunch of Asparagus
2 Tb. Olive Oil
Salt and Freshly ground black pepper
Spray your pan with non-stick spray, 2 Tb of olive oil, and preheat the pan over medium-high heat. Add the shallots and saute for 1 min. Add the asparagus and saute for 2 minutes. Cover and turn the heat down to medium. Cook for 5-10 minutes. Stir frequently and cook until firm but can be pierced with a fork. (If the pan is dry add water or chicken broth.) Salt and pepper to taste.
