Sauteed Asparagus

It's asparagus season and it is a vegetable you want to incorporate into your healthy lifestyle. It is full of vitamins. Vitamin K, Folate, and Vitamin C are just a few of the vitamins found in this vegetable. My favorite way to enjoy asparagus is to lightly saute it in olive oil. This way is simple and delicious. Because it still has a little crispness to it means that is hasn't lost all of it's vitamins during the cooking process.


Ingredients

1 Bunch of Asparagus
1 Scallion
2 Tb. Olive Oil
Salt and Freshly ground black pepper

Spray your pan with non-stick spray,  2 Tb of olive oil, and preheat the pan over medium-high heat. Add the shallots and saute for 1 min. Add the asparagus and saute for 2 minutes. Cover and turn the heat down to medium. Cook for 5-10 minutes.  Stir frequently and cook until firm but can be pierced with a fork. (If the pan is dry add water or chicken broth.) Salt and pepper to taste.


**PLF Daily Tip**
Be sure to get 3 servings of fresh veggies every day. Vegetable should make up 1/2 of your plate and the rest should be 1/4 protein and 1/4 grain or starch.
