Delicious Hummus

We just got back from a fun filled week in AZ.  We stayed at The Westin Keirland Resort and loved every minute of it.  The restaurants across the street from the resort are so delicious and there is one called The Greenhouse which is to die for.  My family and I love everything there, but the hummus was a big hit with us.  They took a traditional hummus and topped it with slices of cucumber, red onion, tomatoes, basil and some feta cheese...yum!  It was served with warm, whole wheat flat bread and some veggies.


So here's a traditional hummus recipe for you all to try.  Enjoy!
Ingredients
  • (15.5-ounce) cans no-salt-added chickpeas (garbanzo beans), rinsed and drained
  • garlic cloves, crushed
  • 1/2 cup water
  • 1/4 cup tahini (sesame seed paste)
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper



  • 1. Place beans and garlic in a food processor; pulse until everything is mixed. Add 1/2 cup water and remaining ingredients; pulse until smooth, scraping down sides as needed.
