First, I have to apologize for not posting for the past few weeks. I started my 6 months, 200 hours of yoga training last week and I have been a little overwhelmed with homework...ya, we have homework. Blah, :( Haha! I feel like I'm in high school all over again, except this time I'm going to do my homework and I won't be so concerned with trying to figure out a way to get to know the hottest guy in school. Who is now my husband...just sayin'. I guess my priorities were right back then.
Anyways, I have missed hearing from you all and wanted to share something really delicious with you guys to make up for it. The recipe below is my all time favorite summer treat and it ends up being every one's favorite treat once they try it. Yep, it's that good!
Grilled Peaches with Mascarpone Cheese (aka Heaven in a Bowl)
Here's what you'll need:
~ 4 firm peaches, halved with the pits removed.
~ Mascarpone cheese (Italian Cream Cheese; you can find it next to the regular cream cheese)
~ Powdered Sugar, or to make it a little healthier Agave Nectar
~ Amaretto Liqueur (sweet, almond flavored liqueur)
~ Sliced almonds; I buy mine pre-sliced from Trader Joe's because I'm lazy.
~ Reduced Balsamic Glaze, which you can buy from TJ's or Whole Foods.
Put a teaspoon, or two of mascarpone cheese into the center of each of the pitted peaches. Place the cookie sheet on the grill for a minute or two; just long enough for the cheese to begin to melt.
Remove peaches from the grill and place each halve into a bowl.
Sprinkle each mascarpone peach with powdered sugar (or Agave), then about 1-2 tablespoons of Amaretto, sliced almonds and about half of a teaspoon of your reduced balsamic glaze. Serve, eat and enjoy immediately!
